Visiting this charming traditional vinegary in the province of Modena is a truly unique experience: you enter a world full of history, visit lofts and breathe in the delicate perfume of traditional vinegar. Mariangela, the owner herself will welcome you into the tasting room where you will hear about her family's story of vinegar production. Learn about how traditional balsamic vinegar and saba (a grape juice condiment) are made. Then walk up to the historic loft and get a glimpse into how vinegar is aged. Return to the tasting room for a vinegar and saba tasting as well as a food pairing with signature ingredients of the region - Parmigiana Reggiano cheese, Parma ham and bread, and seasonal fruit. Mariangela will gift you a bottle of the family’s saba and memories that will last a lifetime!

Learned a lot about balsamic vinegar making in this intimate tour and at Azienda Agricola La Ca Dal Non. The family members who took us around were spectacularly helpful especially when we had a little hiccup with transportation issues! I would recommend this tour even though it is off the beaten path.

I went with my daughter (21) and her friend (20). It was incredible meeting Giovanna and her daughter Mariangela who are the owners of this family-run, small-batch organic balsamic vinegary. Learning about the heritage and process and seeing all the phases was really special. And tasting all the varieties was amazing. They also prepared tasty treats using the various aged vinegars which were delicious. T told Mariangela ahead of time that we had a one person with a milk allergy and one person who was vegetarian and she accommodated everyone! It was good to be able to purchase (no pressure) and have their US importer ship to our home in the USA. I will also say that there wasn't much walking around, so good for those with limited mobility, although there were stairs involved to see the barrels (but that was only part of the tour) . Exceeded expectations! Would recommend to everyone!

This was an amazing experience! Giovanna was led us through her beautiful gardens and acetaia. It was special to be at her home rather than a factory style setting. We had the opportunity to taste many ages and variations of balsamic vinegar. She taught us all about how it is made and the types of barrels and aging process. We were able to purchase and send home from her New York connection. Wonderful!
