You will appreciate the real Parmigiano cheese production in a very traditional factory. It will be possible to see the when cheese makers pull the cheese from the milk vats. You will then be taken to the seasoning/storage rooms to see the final stages of production. At the end of the tour there will be a tasting of different aged Parmigiano Reggiano Cheeses. For Parma ham Prosciutto factory visit we will proceed to the idyllic hills of Langhirano home of Prosciutto di Parma Ham. You will move into the “environmental temperature stage”, by visiting the seasoning rooms, here characterized by the typical scents of the ham. During this stage it will be explained the method of “spillatura”, the process in which only the finest ham pasts the test, those selected by the Inspector of the Consortium will then be branded with the infamous ‘Crown of Parma’. At the end of the food tour there will be a degustation of Parma ham and a glass of Malvasia, a sparkling, white local wine.

    Parmigiano Reggiano Cheese factory The tour commences with a brief history of Parmigiano Reggiano Cheese. You will then proceed inside the factory where you will be able to see the production of the cheese taking place however, if you wish to see the start of the process the tour must commence before 9.00am as this is the time the cheese makers pull the cheese from the milk vats. You will then be taken to the seasoning/storage rooms to see the final stages of production. At the end of the tour there will be a degustationof different aged Parmigiano Reggiano Cheeses. There is also the opportunity to buy local products from the on-sight shop.

Matteo is a very interesting and knowledgeable guide for our Parmigiano Reggiano Cheese and Parma Ham factory visit. We can visit the factory and understand the cheese making process. The owner of the prosciutto ham factory, Claudio, is such a respectful man. The artisan company ‘Ziveri Claudio’ is a small family-run business operating in the Parma area since 1987. Claudio is 72 years old now and still so energetic and curing his ham everyday as his passion for this job. #zivericlaudiosalumificio

We took the train in for a day trip from Bologna - the tour meeting spot is immediately outside the Parma train station. Guides loaded us into 7 person, comfortable, air-conditioned minivans for a drive to the countryside. Our guide, Sergio, was wonderful - loves his country, full of detailed information. Watched the steps which go into making Parmesan-Reggiano cheese, then sampled the cheese with some wine. Bathroom available. Then headed to see how Prosciutto ham was cured, & offered sandwich samples with wine. Great guy who sliced the meat for us. Great pace - great tour - very appreciative to our guide, Sergio. Glad we booked. Tip- we arrived a bit early & ate breakfast/ used the (clean) bathroom/grabbed waters at ‘GreenGage’ adjacent to the tour meeting spot - excellent. I’d recommend eating breakfast as the tour food is delicious but more of a snack and towards 1pm. After the tour, we (easy) walked into Parma to see some of their sites.
