Great tour with Mi and Kazuki in Takayama today! After a quick skim of the Sunday market understanding the local fresh produce we were off to a Sake brewery !
We had a concise and clear brief about Sake production and a more extended introduction to the varieties of Sake and how to make an informed selection. We were the let loose to taste the different types to select our preferred brew! Of course my wife and I disagreed on preference except that unpasteurised Sake had a full flavour.
Next Miso, that ubiquitous stock consumed daily in many Japanese homes. The preparation process was explained (made from dried fish not vegetables. Followed by the all important tasting - delicious!
A stroll through another Sunday food market and we tasted, fermented garlic, persimmon, chestnut biscuits, wonderful ginger and more! Followed by perfect beautiful sugar sweets in the form of cherry blossom. What a treat!
All finished with a coffee in a local cafe - perfect.
