I did a 5 night, 6 day safari visiting Tarangire, Manyara, Serengeti, and Ngorongoro, also stopping by Oldupai Gorge, together with my wife and the excellent guide Lameck and can highly recommend both the company and this itinerary. We saw everything we wanted to see and more, large lion prides including cubs, cheetahs with cubs, leopards, gigantic wildebeest herds, big elephant herds, rhinos, etc etc etc. Name it and we saw it multiple times, with great spotting from Lameck.
Lameck was also very knowledgeable about different birds, and even though we weren't there primarily for birds there are so many unique, beautiful and interesting species you really need to also spend some time watching these. (One of the reasons why I recommend a longer safari, so you aren't just trying to drive around the whole time on your 1 or 2 day safari trying to check off the big 5).
For the Oldupai Gorge Museum, I really enjoyed it, and I'd say do it if it piques your interest, otherwise stick to the animals. On anything less than a 5 day safari I'd definitely skip it unless you have an anthropology passion.
In short, Lameck + Migration Venture = great.
