As Georgian food culture slowly emerges from its Soviet-era deep freeze, Tbilisi’s chefs are looking beyond their country’s borders while also reviving and safeguarding Georgia’s unique culinary traditions. The open spirit of the Silk Road is back in town, and on this epic day of eating, we’ll get a taste of what it’s all about.
Our day begins where Tbilisi got its start millennia ago, by the natural hot springs in the oldest part of the city. Here, a mosque, synagogue and Georgian Orthodox cathedral provide a panorama that tells much about the city’s diversity and its history as an important center of trade and culture and a key stop along the ancient Silk Road. Tbilisi’s strategic location made it a desirable place to occupy, and there’s no shortage of conquerors that passed through: Romans, Byzantines, Mongols, Khazars, Arabs, Persians, Ottomans, Russians and, finally, the Soviets.

Old Town (Altstadt) Tbilisi, Tbilisi, Georgia We’ll begin in the atmospheric old town of Tbilisi, where we will visit an underground Azeri tea house. 30 minutes
Sioni Cathedral Church, Tbilisi, Georgia We will make our way to a church-run shop selling products straight from Orthodox monasteries – long-time bastions of artisanal production – here we will sample some stunning treats 60 minutes
Freedom Square, T'bilisi, Georgia In the back streets near Freedom Square we will visit an unusual wine bar for a tasting of Georgia's finest small-scale wine producers. 60 minutes
Anchiskhati Basilica, Tbilisi, Georgia We will visit the oldest church in Tbilisi, an architectural and cultural treasure. 45 minutes
Rezo Gabriadze Marionette Theater, Tbilisi, Georgia Near this famous theater, we will sit down for shkmeruli, a sizzling chicken dish and certpeice of any Georgian feast. 45 minutes
Parliament of Georgia, Tbilisi, Georgia Near Parliament we will visit a khinkali master and sample her freshly-made dumplings. 60 minutes
Metekhi Cathedral, Tbilisi, Georgia Another stunning Cathedral we will pass by on our way to an artisanal cheese shop for a tasting. 30 minutes

Maka was a superb guide for this fantastic experience. I've done food tours in half a dozen countries and this was the best! I would highly recommend to my friends and family and anyone who is interested in the smash of culture, history, and food.

The experience was pleasant, and the restaurant options and food were impressive. Additionally, the tour guide, Maka, was delightful. The only odd thing there wasn’t any food tasting in the first two hours of the tour, during which only tea was served. The first meal wasn't until around 12:30 pm. To address this, I recommend incorporating a light snack in the morning.

I always try and book a food tour to every new city I visit, but this was my first with Culinary Backstreets. Even though I ended up being the only one on my tour, Make was a lively and excellent guide, ready to share her extensive knowledge of the city and Georgia's rich gastronomic history and culture. Highly recommend!
