hello every one! im chef Miguel Alvarez. After several years cooking fine dinning and living in scandinavia for some years my mind was changed.. so, I decided to go back to roots and create "The Real Oaxaca Cooking Experience" at Quinta Brava, this project tries to recover and pass the knowledge and the heritage from the real ancient Oaxaca cuisine and the magic with it, also, to show you the ancient methods and utensils that our older relatives used to use, we will cook a nice bunch of recipes form all over Oaxaca in a old fashioned wood stove called "Lorena" cause the way how is been constructed ( in Spanish "lodo y arena" in English "mud and sand") and you will be the main chef of this culinary experince, you will cook everything with your hands

Oscar and his assistants were wonderful, warm and efficient in this all-day cooking class. We enjoyed the beautiful setting of Oscar's shady backyard and outdoor kitchen and the other participants of our group were friendly, enthusiastic and interesting. Monica and Vicki were superb at keeping everything on track - from shepherding us through the marketplace to each cooking process in the class. Oscar provided food inspiration, history, recipes, and instruction - plus he has a great sense of humor! We enjoyed doing our best to grind corn into masa, to form tortillas, to make tamales; and we really enjoyed all the education on moles, Oaxacan food in general, and getting the opportunity to try so many foods in one day. The recipes are coming and we will do our best to recreate some of them at home in the near future. I highly recommend this class in Oaxaca.

We had an amazing time!! We learned how to make so many things and it was way more hands on than any other cooking class. The location and the outdoor kitchen was such a cool location. Everyone there was so nice and accommodating. We tried so many different moles that were all amazing!!
