Cooking traditionally is something that includes more than a dish, cooking in Oaxaca means that you get to know our culture and our heritage, way of life and above all our warmth. I will teach you how to choose good ingredients or even how to substitute them for the ones you like. If you are vegetarian or vegan, Oaxacan cuisine has more than one option for you, since meatless dishes are part of our culture and I can adapt to your needs. Currently I have received more than 500 travelers from all over the world in my kitchen, and this is a new channel for you to come to know the authentic traditional cuisine. Unbelievable day spent with Mimi and her family. We were so welcomed to her home; she and Charlie, her son, spent time getting to know everyone (about 10 people) and encouraged a relaxed, friendly atmosphere. She expertly guided all of us in the creation of salsa, mole and tamales. Throughout, we were chatting with the family, getting to know them. This is a must do in Oaxaca.

This was the highlight of our stay in Oaxaca! Mimi and her son, Charley are warm, funny and so well organized. They make everyone feel at home, while providing a beautifully structured lesson with wonderful results! I really can't say enough about this experience. Highly recommend!

The food was fabulous and I learned a lot about authentic Oaxacan cooking. The highlight was Mimi and her son, Charlie. They welcomed us into their home as if we were family. Mimi is incredibly warm and genuine. She was able to wrangle a dozen guests and guide us while we prepared multiple dishes. Did I mention the food was fantastic? If you can only do one thing while you're in Oaxaca, take Mimi's cooking class.
